Thanks Traci but that's not quite what I'm looking for. I remember not having to go into configurations at all.  There also doesn't seem to be a way to edit the courtesy due date reminder from those profile options.

Somehow I've completely forgotten how to adjust the number of days after which the courtesy due date notification goes out. Wasn't it in the Fulfillment module?
