It appears to me that there are two ways to go and they both involve making changes on a quarterly basis. Here's a useful KB article<https://knowledge.exlibrisgroup.com/Alma/Knowledge_Articles/Add_or_modify_%22End_of_Term%22_event%2C_for_loans_and_renewals_due_date_(e.g._at_new_semester)>.
We can either update the end of term event in the calendar OR create additional end of term events in the calendar and then go in and update the TOU(s).

For fixed date due dates, Alma will use the due date policy as you have it configured.
So, Kirsti, for Seattle, your "end of term" policy is currently set to the value "end of term".
Since 'end of term' is currently set to '8/17/2017' (based on your calendar), you should probably update the value to one of the other calendar dates you have configured (probably 'end of term fall 2017').
You can do this by going to Fulfillment Configuration > Advanced Policy Configuration, and then editing the 'End of Term' due date policy.

Question about end-of term dates in the calendar...
We've entered all the end-of term dates for our 2017/2018 school year in our institutional calendar:

If I understand the way the calendar works, Alma will use the "nearest" future end-of-term date, right? So up through 12/15/2017, Alma will use the End of Term Fall 2017 date. For fulfillment transactions that occur between 12/16/2017 - 3/21/2018, Alma will use the End of Term Winter 2018 date of 3/21/2018 as the end-of-term-date. For fulfillment transactions that occur between 3/22/2018 - 6/15/2018, Alma will use the End of Term Spring 2018 date of 6/15/2018 as the end-of-term-date. For fulfillment transactions that occur between 6/16/2018 - 8/17/2018, Alma will use the End of Term Summer 2018 date of 8/17/2018 as the end-of-term-date. Is this correct?
So if we have all the end-of-term dates entered into the calendar for the entire school year, we don't have to update anything before each new quarter, do we?
It will be ok!

Just a reminder, since new the quarter is starting now, or soon, don't forget to update any 'end of quarter' or 'end of term' due dates you are using, to reflect the appropriate new and current due date.
You can look at the associated TOU(s) to see what calendar reference is being used for the end of temr due date. Usually, something like 'end of term' or 'end of quarter'.
After confirming that, just go into the institutional or library calendar, and update the respective date to the new end of term due date.
*And don't forget to click "Apply Changes" in the calendar!
Calendar changes don't "take" until you click the "apply changes" button.

Try it with a live transaction, rather than the configuration utility.
Some things (like patron expiration dates) aren't available to the config utility. The same might go for end of quarter dates.

Hi Wade,
I updated the calendar and made sure the end of term was set to 12/6/2017. When I used the utility config it's still showing that the due date comes up as 9/18. And the fines aren't calculating. Here's a screen shot:

I'm not sure what is wrong since I've updated the calendar and the policy seems to be set correctly.

Meanwhile, it looks like it's the end of term date(s) in your calendars that need to be updated.
The TOU has due date set to 'end of term', which points back to the value set in the calendar.
So, at the turn of each quarter, you need to go into the calendars and update the end of term date, accordingly, at the institution level, and/or at each library, depending on how you're managing that date.

Hi,
It's the first day of fall quarter, and we're checking out a bunch of quarter reserves that should have the due date of the students expiration date - 12/6/2017. The due date for these books are coming up as 9/18/2017. When I look at the student record, the expiration date is correct. When I look at the item policy through the utility config the policies look correct, yet the due date is coming up as 9/18/2017.
I'm not sure why these don't have the correct due date. They worked fine in the summer.
Can you please check on this and see what might be happening and why the quarter reserves aren't checking out for the full quarter to have the due date 12/6/2017? Right now we're having to change the due date for all the quarter reserves we check out.
